A minimum number of participants are required to sign up for each outing in order for it to take place. Given this, we ask that when you register for the symposium you indicate in order of preference which excursion you'd like to take. We will attempt to honour your first choice as best we can.

Vegetarian menus or menus for those with food allergies are available. You must indicate any special needs of this sort when registering.

1) Montréal Tour

Leave ÉTS at 2 pm by bus on a guided tour of Montréal. On this excursion, you will discover Old Montréal, the Olympic Park, Mount Royal as well as many other city quarters.

This journey concludes at Le Cabaret du Roy restaurant situated in the heart of Old Montréal. Here, as you savour the First Settler's Feast, musicians and historical characters re-enact the celebratory spirit of New France in the late 18th century.

Since the restaurant is near the downtown core, after the meal delegates can explore Montréal's varied night life, making their own way back to their hotels.

2) History, beer, and Gastronomy in Chambly

Leave ÉTS at 2 pm by bus for Chambly, a town situated about 30 kilometres from Montréal, on the south shore of the St. Lawrence River. Delegates can visit Fort Chambly, a French fortification on the Richelieu River, at the foot of the Chambly Rapids. This imposing stone sentry of New France withstood many upheavals and currently lives on as a valuable testament of the French presence in North America.

Participants will also tour the Unibroue micro-brewery where a guide will explain the various stages of brewing traditional beer.

The evening will conclude at the Fourquet Fourchette restaurant. Right next door to historic Fort Chambly, the Fourquet Fourchette is immersed in the historical ambiance of New France. Here, delegates will enjoy the unique characteristics of Unibroue beer and discover our rural gastronomy.

Return to Montréal by bus is scheduled around 10 pm.

3) Rural Québec History - Sugar Shack

Leave ÉTS at 2 pm by bus for the Sucrerie de la Montagne, situated 70 km west of Montréal in the heart of 120 acres of rural land and forest. Here, Québécois heritage is embodied in the atmosphere of this traditional sugar house of yesteryear.

This excursion focuses on the daily life of Québec's early colonists. In the enchanting Québec forest, discover the beauty of a natural maple grove tapped using traditional methods. Visit the log cabin and its bakery made of fieldstone, learn how to bake bread using traditional methods, and how artisans did their work.

This tour concludes in the barnwood dining room where participants will savour authentic Québec cuisine and can join the Sucrerie's singer-musicians in traditional songs and dance.

The first bus returning to Montréal is scheduled around 9 pm.
